Wait for the flame of the charcoal grill to die down. You don’t want a full flame roaring when you toss on the burgers. This is just going to burn the meat. Instead, allow the coal to burn down until mostly gray. The heat over the coals will still be hot, it just provides a steadier cooking temperature.
